Students of specialty 181 Food Technology had a unique opportunity to immerse themselves in the world of baking and the restaurant business during a visit to the DOU bakery and café. Meeting Illia Kolontai – a co-founder of the business, a graduate of our college and a true enthusiast of his craft – made this experience especially valuable.
They learned about the technologies of craft bread production – natural, aromatic bread baked according to traditional recipes. They visited the DOU café, where they felt the atmosphere of genuine European service. They toured the establishment's kitchen and learned the basics of organising a restaurant business. They explored important aspects of guest service, product quality and the uniqueness of the establishment's concept.
Illia Kolontai is a vivid example that one can run a business not only professionally but also creatively and with soul. He proves that love for one's work, a deep understanding of technology and a willingness to experiment open up new opportunities in the food industry.
We sincerely thank Illia for the warm welcome, the sincere desire to share knowledge and the promotion of baking and confectionery. It is precisely such meetings that inspire future specialists, motivate them to develop and teach them to value traditions while combining them with modern trends.
